Sophie’s Favourite Banana Loaf

One of my favourite (somewhat healthy) cakes to eat is banana cake, and I love to whip one up when I have bananas that have gone too ripe to eat. This recipe is my favourite to make, so I thought I’d share it with you.

You will need

  • 3-4 ripe bananas
  • 2 cups flour
  • 1 cup brown sugar
  • 1 egg
  • ½ cup milk
  • ¾ cup butter (softened)
  • 1 tsp vanilla
  • 1 ½ tsp bicarbonate of soda
  • ¼ tsp salt
  • 1 ½ tsp baking powder
  • Walnuts (optional)

Firstly set the oven to 180 degrees c, and grease two loaf tins, or one large loaf tin.

In a bowl, mix the milk and bicarbonate of soda in with the bananas, and mash them with a fork. I tend not to over-mash my bananas, as they break up more when you combine the mixture later. Put this mixture aside.

In a separate bowl, combine the brown sugar and butter, and then add the egg and vanilla. It may curdle a little at this stage, in which case it’s ideal to add a little of the flour. Add the banana/milk mixture in, and blend lightly until combined – if you over mix here the banana chunks will break up.

Combine the rest of the dry ingredients – the flour, baking powder and salt – and add a little at a time to the wet mixture, mixing until well combined. Pour this mixture into the loaf tins, top with walnuts if desired and bake for around 60 minutes until a skewer comes out clean.

It’s such a simple yet scrummy recipe, and there are so many ways to adapt it – you can sprinkle chopped walnuts on top to create a crunchy topping like I have, or even stir them into the mixture before you pour it into the tin. Why not add chocolate chips, blueberries or anything else that takes your fancy? You could also switch in ½ cup flaxseed for ½ cup of flour to add some extra goodness. I love to enjoy it with a tasty cup of tea, for a great afternoon snack – my current favourite is Clipper Lemon Green Tea.
